Fresh Farmed Oysters

Oysters have been farm raised in the Pacific Northwest for over 100 years, and at Penn Cove Shellfish, we have created alliances with the some of the best oyster growers of the northwest region. You may click this Half Shell Oysters link to review our different varieties.

Almost every day we bring in oysters from the oyster farms of Washington, Oregon, California and British Columbia and also from the east coast for the summer months. We then wet store the bags of oysters in Penn Cove or in our certified 3000 gallon wet storage facility on shore, thereby allowing us to always keep the oysters in the best of conditions in cold water.

Fresh from the water instead of fresh out of the cooler makes all the difference when selling shellfish, especially for oysters meant to be served raw on the half shell. Water spilling from the shell and the fresh sea smell as the oyster is shucked is a sure sign of freshness, it is something you should expect!
